Pumpkin Chocolate Chip Bread

 Pumpkin Chocolate Chip Bread

First I must preface this by noting that we make our own pumpkin puree.  When we plant pumpkins in our garden, we always plant the sugar variety.  That way we can use our pumpkins for a harvest display and then eat our pumpkins after the harvest season is over.  All we do is cut the pumpkin in half, put face down in a roasting pan, add a little water in the bottom of the pan, and roast on 450 for about an hour, or until the pumpkin is soft.  Then, scoop out and pop in the food processor.  Easy.

4 eggs
2 cups sugar
1/2 cup oil
1/2 cup applesauce
2 cups pumpkin puree

1 1/2 tsp cinn
1 tsp nutmeg
1/2 tsp allspice
2 tsp baking soda
3 1/2 cups flour
2/3 cup water
1 1/2 cups chocolate chips (optional)

Mix wet.  Add dry.  Add water and chocolate chips.  Place in 2 greased loaf pans.
Bake 350 for 1 hour 15 min.
